Try this healthy recipe for Chicken Lo Mein from Penny Kovacs (@pennysprimal) if you're craving take out! You won't be disappointed.
INGREDIENTS
- 1 1/2 lb chicken thighs, cut in pieces
- 1/2 cup arrowroot powder
- 1/2 cup cassava flour or tapicoa
- 1 tsp salt
- 1/2 cup orange juice, unsweetened
- 5 green onions, sliced, reserving some green slices for garnish
- avocado oil for cooking
- 1 cup carrot sticks
- 1 lb snow peas
- 1/2 cup orange juice, unsweetened
- 1/4 cup chicken broth
- 1/4 cup coconut aminos
- 1 tbsp fresh ginger, minced
- 1 clove garlic, minced
- 1 tbsp sesame oil
- 2 tsp arrowroot powder
DIRECTIONS
- Combine in a large bowl, arrowroot, cassava, salt & orange juice & whisk well (it will be thick)
- Add chicken & stir to coat, set aside
- Add oil to pan, a bit more than coated
- Add chicken pieces not touching, cooking till golden brown, flip and cook other side
- Move to a plate lined with paper towels
- Drain all but 2 tbsp of oil
- Add onions & carrots stirring till onion are translucent
- Add chicken back to pan
- Combine all sauce ingredients in a bowl whisking to combine
- Add sauce to pan, stirring well to coat chicken
- Add snow peas, stirring in & cook 4-5 minutes
- Garnish with green onions
- Enjoy!
